We whip up this beloved country classic that my great grandmother was famous for around this time each year to celebrate the abundance of the season and our ancestors. I hope you love it the way we do and it brings you much warmth and comfort!
Ingredients:
Cake
4 cups tart apples, diced
2 cups sugar
3 cups flour
1 cup oil
2 eggs
2 teaspoons baking soda
2 cups nuts, chopped
Glaze
2 cups powdered sugar
2 tablespoons cinnamon
2 teaspoons vanilla
¼ cup milk
Instructions:
- Preheat oven to 350
- Combine diced apples and sugar and allow to sit for 20 minutes to allow apples to start to sweat.
- To your apples add flour, oil, eggs, baking soda, and nuts.
- Lightly grease and flour a loaf pan and fill ¾ with batter.
- Bake 1 hour or until a toothpick comes out clean.
Glaze:
- Combine ingredients for glaze and drizzle over cake while it is still slightly warm.
