Mom-Mom's Apple Cake

We whip up this beloved country classic that my great grandmother was famous for around this time each year to celebrate the abundance of the season and our ancestors. I hope you love it the way we do and it brings you much warmth and comfort!

Ingredients:

Cake

4 cups tart apples, diced
2 cups sugar
3 cups flour
1 cup oil
2 eggs
2 teaspoons baking soda
2 cups nuts, chopped

Glaze

2 cups powdered sugar
2 tablespoons cinnamon
2 teaspoons vanilla
¼ cup milk

Instructions:

  1. Preheat oven to 350
  2. Combine diced apples and sugar and allow to sit for 20 minutes to allow apples to start to sweat.
  3. To your apples add flour, oil, eggs, baking soda, and nuts.
  4. Lightly grease and flour a loaf pan and fill ¾ with batter.
  5. Bake 1 hour or until a toothpick comes out clean.

Glaze:

  1. Combine ingredients for glaze and drizzle over cake while it is still slightly warm.
